Esther C. Okeiyi, PhD, RD, LDN, a registered, licensed dietitian is the Dietetic Internship Program Director. Additionally, she is the Chair of Human Sciences Department. Dr. Okeiyi holds a Bachelor of Science degree in Food Technology/Home Economics from Southwest Missouri State University and Master of Science and Doctorate degree in nutrition from Mississippi State University in 1982. She also holds a Master of Science degree in Hospitality Administration from Florida International University. As a Program Director, Dr. Okeiyi supervises program planning, monitoring and evaluation. She coordinates and recruits students into the program, and serves as liaison between the Dietetic Program and The American Dietetic Association. Dr. Okeiyi is a tenured full Professor and a full-time faculty member at North Carolina Central University. Dr. Okeiyi teaches nutrition education and clinical nutrition courses.
